Chef's Corner This
feature is the first in a series of articles designed to illustrate how
diet can be part of the recovery process. The recipes and tips are
designed to provide nutrition which can reverse some of damage caused by
Alcoholism and reduce the cravings for alcohol.
Helpful Tip: As you remove alcohol from your diet you will look to substitute the caloric deficit. Sugar and alcohol are both carbohydrates with no nutritional benefits. Part of craving for alcohol is a craving for sugar! Reduce or eliminate sugar in your diet and give yourself an added advantage in abstaining from alcohol. Two nutrients that assist in the reduction of cravings are niacin (B3) and chromium. Nutritional Tip: Food that are high in niacin and chromium include: Broccoli Garlic Potatoes Apples Fish Poultry Legumes Basil Pesto Crusted Chicken Breast with Broccoli and Lentils 4 oz pesto (available in most grocery stores) 4 boneless skinless chicken breast 1 head broccoli (cut into small florets) 4 oz lentils I onion (minced) ½ cup olive oil 2 cloves garlic (minced) 1 Qt. canned chicken broth 1 Lemon Toss chicken breasts in pesto and allow to marinate overnight in glass bowl. Pre-heat oven to 350. Sweat onion over moderate heat in 1 Tbs. of olive oil until onions are translucent. Add garlic and cook one minute more. Add lentils and chicken broth and simmer for twenty minutes or until lentils are firm but cooked. Hold just warm on the stove. Season and sear chicken in 2 Tbs. olive oil over medium heat, about 2 minutes per side. Transfer to baking dish and cook 10 minutes or until done. While chicken is baking steam broccoli until bright green about 10 minutes. Place lentils on plate with chicken on top and broccoli to the side. Squeeze lemon on broccoli.
